I go pretty heavy on the mayo which makes it creamy and you only need a little splash of the rice vinegar for some acidity. My grandma puts this in her deviled eggs and it is a complete game changer.

Egg salad sandwiches are an easy meal to throw together and one sandwich breaks down to about $1.53 (what you use specifically will of course change this number), but that is a cheap meal if you ask me! Add some frozen cooked vegetables or potato chips to complete the meal and keep it at a low cost.
