Cauliflower gnocchi is officially one of my favorite sides. It is incredibly delicious and super easy to make. I have only made it twice now and have it nailed down. It is such a good substitution for real gnocchi- great way way to incorporate some extra veggies!
Directions for Perfectly Crispy Cauliflower Gnocchi

1. First, drizzle a little avocado oil in a frying pan on medium-high heat. Pour the bag of cauliflower gnocchi into the hot pan and cook until golden brown.

2. While the gnocchi is cooking, pre-heat the oven to 400 degrees and spray a cookie sheet with a little pam. Once golden brown, transfer the gnocchi to the pan, sprinkle with a little garlic powder and pink Himalayan salt, and give a little stir. Bake the gnocchi until crispy, about 15 – 20 minutes!

I’ve been dipping them in the Green Goddess dressing from Trader Joe’s and even sprinkled a little freshly grated Parmesan cheese on top the first time I prepared them. Such a good combination. The gnocchi is also delicious cold the next day!
