Fried avocado tacos, need I say more? These were incredible and I can’t wait to make them again. It’s also important to note that these are an easy 15 minute dinner if you have most of the ingredients already prepped!

Ingredients for Building the Tacos
Corn Tortillas
Olive Oil Spray
Sour Cream
Lime Cabbage
Cilantro Lime Corn
Queso Fresco
Fresh Squeezed Lime Juice
Fresh Cilantro

Avocado Cilantro Yogurt Dressing

To make the fried avocado I lightly the coated the avocado wedges with flour (I used organic, unbleached), organic eggs, and then panko breadcrumbs! The panko was mixed with garlic powder, pink Himalayan salt, and black pepper. The avocado wedges were pan-fried in avocado oil until crispy and golden brown on both sides.

Once the avocado was done, I lightly pan-fried the corn tortillas with olive oil spray. Heating them and cooking them a little bit helps them stay together, otherwise they just tear when you fold them. Grilling them is the best!

Once the tortillas were slightly browned I spread some sour cream on them and added the rest of the toppings that included: lime cabbage, sliced red onion, fried avocado, cilantro lime corn, mild pico de gallo, queso fresco, fresh cilantro, fresh squeezed lime juice, and a splash of tabasco. On one of them I also added avocado cilantro yogurt dressing, which is my favorite dressing to add to pretty much any tacos, especially steak tacos!
