Welp, we are in week 2 of my Whole30 challenge and I’m surviving (obviously). Some days are definitely harder than others and props to anyone who has completed Whole30 before or anyone who eats this perfectly all the time, because it is NOT easy. With that being said though, I feel absolutely amazing and am so proud that I am still going strong. I just wanted to pop in and share my meals from the week 1 of my journey!
Day 1

Meal 1:
- Russet potato with Primal Kitchen ketchup and 1 over easy egg with Tabasco
Meal 2:
- Salad with iceberg, red pepper, onion, green onion, tomato, sunflower seeds, salt and pepper, and Primal Kitchen honey mustard vinaigrette (hot dogs pictured went in the garbage)
- Siete chips with avocado salsa
Meal 3:
- Salad with iceberg, red pepper, onion, tomato, salt and pepper, grilled chicken breast, and Primal Kitchen honey mustard vinaigrette
- Black grapes
Day 2

Meal 1:
- Russet potatoes with bell pepper, onion, and Primal Kitchen ketchup and 2 over easy eggs with Tabasco
Meal 2:
- Grilled BBQ chicken wings with Primal Kitchen BBQ sauce (rub consisted of cumin, chili powder, garlic powder, onion powder, paprika, and salt and pepper)
- Black grapes
- Plantain chips
Meal 3:
- Grilled skirt steak (marinated in balsamic vinegar, avocado oil, minced onion, and rosemary)
- Roasted broccoli and cauliflower
- Black grapes and strawberries with unsweetened coconut
Day 3 + 4

Meal 1:
- Plantain chips
Meal 2:
- Applebee’s chicken breast over a side salad with pecans and lemon vinaigrette
- Siete chips with salsa and avocado salsa
Meal 3:
- Grilled chicken breast with spring mix, spinach, blueberries, apple, pecans, shredded carrots, and Primal kitchen honey mustard vinaigrette
- Black pepper and basil chicken sausage with mustard
- Apple
Meal 1:
- Russet potatoes with Primal Kitchen ketchup and 2 over easy eggs with Valentina salsa picante
Meal 2:
- Siete chips and salsa
- 1/2 jalapeno beef stick
Meal 3:
- Grilled chicken kabobs with Primal Kitchen teriyaki
- Grilled veggie kabobs with peppers, onions, mushroom, and Primal Kitchen oil and vinegar
- Homemade Yukon gold potato french fries with Primal Kitchen ketchup
Meal 4:
- Apple
Day 5 + 6 + 7

Meal 1:
- Chipotle lifestyle bowl with double chicken
- Cinnamon apple chips
Meal 2:
- Air fried Yukon gold potatoes with Primal Kitchen ketchup
- Couple bites of salad that had iceberg, sunflower seeds, and Primal Kitchen honey mustard vinaigrette
- Watermelon
- Terra chips
Meal 3 (11:40pm at night):
- Cinnamon apple chips
- Roasted mixed nuts
Meal 1:
- Buffalo Wild Wings chipotle BBQ dry rub, spicy garlic, and lemon pepper dry rub traditional wings (the chipotle BBQ is almost compliant)
- Carrots and celery
Meal 2:
- Carrots and broccoli
- Sautéed apples in coconut oil with cinnamon and vanilla extract
- Roasted Yukon gold potatoes
Meal 1:
- Watermelon
Meal 2:
- Plantain crisps and guacamole
Meal 3:
- Applegate bacon
- Sautéed apples in coconut oil with cinnamon and vanilla extract
- Carrots and broccoli
- Leftover potatoes and onions
- Plantain chips
I am very proud of my choices and am feeling fantastic. I know that plantain and Siete tortilla chips aren’t necessarily Whole30 approved because they are a processed item, however, when I do eat them it’s a small amount that I am fully in control of and the ingredients are compliant. They help keep me sane lol.
